Beef Recipes: Curry Beef Pie

Ingredients

  • 750 g Carina North Quality grass fed beef rump steak
  • 1 ½ tablespoon plain flour
  • 2 tablespoon olive oil
  • 1 brown onion, chopped
  • 1 ½ tablespoon curry powder
  • 1 ½ cup beef stock
  • 2 sheets puff pastry
  • 3 sheets shortcrust pastry
  • 2 garlic cloves, finely chopped
  • 3 teaspoon brown sugar
  • 1 tablespoon milk

Curry Beef Pie: Method:
Step 1: Coat the beef in flour by placing it into a large seal-able plastic bag. Heat 1 tablespoon of oil in a large saucepan (medium-high heat) and cook beef until brown. Transfer the cooked beef into a bowl and let it rest.
Step 2: Add 1 tablespoon of oil into the saucepan and cook the onion until nice and golden. Add Garlic and curry powder to the saucepan and stir for 1 minute. Quickly add the beef back to the saucepan.
Step 3: Add the beef stock and brown sugar and bring to boil. Reduce the heat to low and leave it to simmer for 1 hour until beef is tender and the sauce has been thickened.
Step 4: Heat oven to  200 degrees Celsius. Lightly coat the base of the pie tray with melted butter. Roll out the pastry sheets onto the pie tray enough to cover the base and side of the pie tray. Carefully spoon the beef mix into the pie tray.
Step 5: Place the puff pastry sheet on top of the pie tray., Roll out the puff pastry sheet enough to cover the pie. Remove the excess pastry and seal all side of the pie.
Step 6: Lightly brush milk over the top of the pastry and make a small cut in the pie for steam to escape. Bake in the oven for 1 hour or until pastry is puffed and golden.
