12 Tortillas + 1kg Beef Mince

Chicken Enchiladas

Prep time: 15 minutes | Cook time: 40 minutes | Serves: 12

This chicken enchiladas recipe makes 8 servings. They are crispy, full of flavour and satisfying for any meal of the day!

Ingredients

  • Fresh lime (if desired)

Directions

  1. Preheat oven to 180’C.
  2. Heat oil in a skillet. Fry garlic, onions and capsicum until soft (about 5 minutes). Add chicken and fry until it begins to brown. Combine black beans, corn and seasoning mixture. Heat until warmed through (2-5 minutes).
  3. Prepare a large baking tray with baking paper and lightly grease the base with olive oil. Lay a flour tortilla flat and fill using a portion of the chicken mixture. Top with salsa and roll to enclose filling. Place in the baking tray. Repeat with remaining tortillas and chicken mixture.
  4. Once the baking tray is full, spoon salsa on top of the tortillas and sprinkle with cheddar cheese. Bake for 15-20 minutes or until the cheese is melted and filling is hot.

Beef Burritos

This delicious, simple and quick everyday beef burrito recipe makes 8 servings and the fillings can be adjusted to suit your individual tastes.

Ingredients

  1. Heat oil in a skillet. Fry garlic and onion until soft (about 5 minutes). Add beef mince and fry until it begins to brown, breaking up the mince as it cooks. Add taco seasoning and cook for 1 minute. Add tomato paste and a little bit of water. Cook until water is nearly evaporated and beef mixture is still juicy. Set aside to cool.
  2. Lay a flour tortilla flat and fill using a ¼ cup of rice. Top with a portion of beef, beans, lettuce, corn, tomato, and cheese.
  3. Fold the tortilla from the bottom to cover the filling, then fold the edges in. Roll and tightly wrap in foil.
  4. Serve as is, heat in the oven, or freeze for later.
