Lamb spice rub recipe
This is a quick and easy recipe to add incredible flavour and a little bit of spice to any meat you throw on the BBQ. We personally love it rubbed over our delicious lamb chops!
Ingredients:
- 1 cinnamon quill
- 2 star anise
- 1 tablespoon coriander seeds
- 1 tablespoon cumin
- 2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon salt
- 1 teaspoon caster sugar
- 500g Carina North Quality Meats lamb trim cutlets
- 2 tablespoons olive oil
Lamb Spice Rub Recipe: Method
Step 1: In a mortar and pestle combine the cinnamon quill, star anise and coriander seeds one at a time, only adding the next ingredient when the previous one is ground down.
Step 2: Then add cumin, smoked paprika, garlic powder, salt and sugar and further grind until combined.
Step 3: Well-coat lamb chops in spice rub and leave to marinate for at least 4-5 hours, if possible overnight.
Step 4: Heat Oil on BBQ and cook lamb chops for 4 minutes on one side. Turn and cook for 4 minutes on the other side.
