Holiday Crispy Roasted Pork Loin with Honey-Raspberry Glaze
- 2.5 kg Carina North Quality Meats pork loin
- 2 Tablespoon Oil (olive)
- 1 teaspoon sea salt
- 250g fresh raspberries
- ½ cup caster sugar
- ⅓ cup balsamic glaze
- 1 teaspoon ground cinnamon
- ¼ cup of natural honey
Holiday Crispy Roasted Pork Loin with Honey-Raspberry Glaze: Method
Step 1: Preheat oven to 220 degrees C.
Step 2: Pat the pork belly dry and score the skin in a diagonal direction.
Step 3: Rub the sea salt over the pork so that it is fully coated in the mix. Drizzle with a little olive oil
Step 4: Place pork in the oven, skin side up. Bake for 45 mins, until skin is crisp. Remove from oven. Rest pork for 10 mins.
Step 5: Prepare the glaze by placing raspberries, caster sugar, balsamic glaze, cinnamon and honey into a saucepan. Place on medium heat
Step 6: Heat until liquid begins to boil and let it simmer.
Step 7: Slice the pork into evenly thick pieces and serve on a plate.
Step 8: Lightly coat the pork loin roast with the honey-raspberry glaze. Serve the rest of the glaze in a cup to pour.
Step 9: Serve the pork loin roast with a side serving of roasted potatoes, carrots and any other vegetable of your choice.
