- 2 kg Carina North Quality Pork Belly
- 1/4 cup olive oil
- 2 tablespoons of sea salt
- 1 tablespoon of ground pepper
- 1 tablespoon of rosemary
- 1 sprig of fresh thyme
Perfect Crispy Skin Pork Belly: Method
Step 1: Preheat oven to 180C (160C fan-forced)
Step 2: Pat the pork belly dry and score the skin in a diagonal direction
Step 3: Mix the olive oil, sea salt, ground pepper, rosemary and thyme in a bowl and mix thoroughly
Step 4: Rub the mix all over the pork so that it is fully coated in the mix. Drizzle with a little more olive oil
Step 5: Place pork in oven, skin side down. Bake for 1 hour
Step 6: Turn pork, skin side up. Increase oven temperature to 220C (200C fan-forced). Bake for 45 mins, until skin is crisp. Remove from oven. Rest pork for 10 mins.
Step 7: Slice the pork into evenly thick pieces and serve on a plate.
