Chicken Recipes: Chicken and Mushroom Soup
- 2 boneless, Carina North Quality fresh chicken breasts cut into bite-sized pieces
- 1 1/2 lb mixed mushrooms, coarsely chopped
- Chopped Parsley
- 1 teaspoon of thyme leaves
- 2 large shallots (chopped)
- 1 litre chicken stock
- Salt and Pepper
- 3 tablespoon olive oil
Step 1: In a large soup pot, heat 1 1/2 tbsp oil on medium heat and sauté chicken 3 or 4 minutes or until opaque.
Step 2: Remove chicken from pot and add remaining 1 1/2 tbsp oil, shallots and thyme leaves.
Step 3: Transfer mixture to a small bowl and set aside, leaving excess oil in pot. Add mushrooms to pot and cook until golden brown.
Step 4: Return chicken mixture to pot, salt and pepper to taste and sauté about 5 minutes.
Step 5: Pour in stock and bring to a simmer. Pour soup into 4 large bowls and garnish with parsley to taste. Serve immediately.
